Description

• Naengmyeon () is a Korean noodle dish of North Korean origin consisting of long, thin, handmade noodles. • Boil the noodles in plenty of boiling water for about 30 to 40 seconds. Drain and rinse the noodles well in cold water to stop the cooking and remove excess starch.
• For a traditional Mul Naengmyeon (cold water noodles) preparation, you would make a broth using beef stock and/or the brine from fermented radish kimchi (dongchimi). A simpler approach is to use a pre-made broth or concentrate that may come with the noodles.
• Chill the broth in the refrigerator or freezer until it is icy or slushy. Assemble the dish by placing the cooked and chilled noodles in a bowl. Pour the chilled broth over the noodles.
• Top the noodles with toppings such as sliced beef, pickled radish, cucumber, pear, and a boiled egg. Garnish with toasted sesame seeds and serve immediately
